Our most limited variety of caviar, the Volga Reserve is the definitive beluga substitute. An exceedingly limited quantity of this delicate roe has in the past been reserved for a select few of our customers as stocks were often spoken for months before arrival.
Now, the Volga Reserve, which we consider the pinnacle for the current caviar market, is available for purchase in limited quantities. Named for the most famous river leading into the Caspian Sea and for this sturgeon's natural habitat, the Reserve features a savory balance of light brininess and luscious creaminess that is akin to the renowned Beluga. Fishlings are carefully selected and brought to aquaculture farms. Once relocated, the fishlings are raised and nurtured using sustainable methods for several years, until they are mature enough to produce viable roe. The roe is then processed and salted using traditional Russian methods.
The most distinguishing characteristic of this caviar is due to fact that it is derived from Ossetra Sturgeon aged 35 or older. Most Caspian caviar are sourced from sturgeon aged 10 to 20 years old, as sturgeon of this age range are both fertile and relatively abundant. Ossetra Sturgeon aged 35 or older are rare to say the least, and as a result of their age and larger size, produce roe that are smooth and supple yet bursting with traditional oceanic flavors.
